In the #6WBC post I mentioned making cabbage soup as a filling, fibrous meal. Here’s the recipe I use… it’s pretty basic, but you can adjust the seasonings and additions however you like. A few of my favorite additions are spinach, broccoli, tomato, beans, chicken and mini meatballs.
Recipe:
1 head cabbage
3 medium carrots
1 stalk celery
1/2 Tbsp all purpose seasoning
1/2 Tbsp onion powder
1/4 Tbsp black pepper
1/8 Tbsp cayenne pepper
{I like mine a bit spicy; you can always eliminate this or add more depending on your preference}
Fill the pot with enough water to cover all your veggies
{you can also use low-sodium chicken or beef stock in place of water for more flavor}
Cook on medium heat until the carrots break easily with a fork
{it takes a few hours, so it’s perfect for Sunday Planday while you’re writing up your menu and workout calendar for the coming week!}
